pumpkin soup - my new favourite dish

Hey guys, I'm a little bit excited, because today I'm introducing you to my new very favourite recipe, that I recently created spontaneously. I already prepared it several times and it always came out very good. Anyways, all measurements are estimations so you might have to add a bit more or less of every ingredient in order to make it turn out perfect.












Ingredients (1- 2 persons):


  • approx 1/3 of  chopped and peeled hokkaido pumpkin
  • 5 medium sized potatoes ( peeled and chopped )
  • 2-3 medium sized carrots
  • about 3 tbsps of vegetable stock
  • a small piece of fresh ginger 
  • a pinch of nut meg
  • thyme
  • 1 clove of garlic ( chopped )
  • a pinch of chilli
  • sea salt
  • black pepper
  • water
  • optional: coconut milk


How to make it:


1. add  garlic to your pot and roast it for 1 or 2 minutes 

2. add the pumpkin, th potatoes, carrots, ginger, vegetable stock and a good amount of water to your pot as well, it should easily cover the vegetables ( it's better to use more water at first and then remove the excess )

3. bring everything to a boil

4. when the vegatbles are soft enough, add the soup into a blender ( if needed remove some of the water, because it shouldn't be too liquid )

5. blend

6. add the soup back into the pot

7. add all the other spices and herbs and bring it to a boil again ( for 1 or 2 minutes )


8. serve with coconut milk and enjoy !
