low fat vegan muffins




Ingredients:

  • aprox. 230 g whole grain flour
  • 150 ml plant milk
  • 9 tbsp fizzy water
  • at least 50g agave syrup
  • 2 bananas
  • 9 dried plums
  • 6  dates ( neglet noor )
  • 2 tbsps oats
  • 2 tsps peanutbutter8
  • 8 g of baking powder ( half a package )
  • a pinch of salt
  • optional:  cocoa powder + cocoa nibs for chocolate muffins
How to:

1. mash the bananas into the agave syrup

2. mix the flour, the plant milk, agave syrup, baking powder, peanut butter, oats, (cocoa powder , cocoa nibs), water and salt for the dough

3. cut the dried plums and dates into very small pieces 

4. put the dough into muffin trays ( till half of it is full ), then add some of the chopped dates and plums and fill it up

5. bake it on 180° for aprox 30 mins ( just till they are ready )
