vegan chili - high carb

























Ingredients:
  • 1 onion
  • 2 garlic cloves
  • half a corn cob
  • kidney beans
  • 300 grs of canned tomatoes ( depending on how liquid you like it )
  • 3 tbsps of tomato paste
  • cumin ( this really gives the taste )
  • oregano or any other herbs
  • black pepper
  • chilli powder
  • paprika powder
  • optional: a pinch of sea salt

How to make it:

1. chop the onion and the garlic

2. separate the corn kernels from the cob and rinse the kidney beans ( if canned )

3.add a pinch of water into a pot and fry the onion and the garlic.

4. as soon as the onion gets soft, add the tomato paste and fry for 1 more minute

5. add in the corn, the kidney beans and the canned tomatoes

6. cook for a few minutes and then add in the spices 

Enjoy it with a bunch of rice ! :)
